Noël Mantel began his career at the Negresco in Nice. He then worked for Alain Ducasse at the Louis XV restaurant in Monaco in 1990 and continued to work with him at the Résidence de la Pinède in Saint Tropez, where Alain Ducasse worked as a consultant.
In 1993, he became the manager of the restaurant hotel the Muscadins in Mougins where he was the Chef as well. This adventure lasted ten years before he decided to open his own restaurant, the Restaurant Mantel in 2002, a few steps away from the Croisette and the Palais des Festivals.
Now, after a full and recent renovation of his restaurant in a more contemporary and intimate style, Noël Mantel concocts sophisticated Mediterranean meals such as an Italian style risotto, a roasted young rabbit with thyme or traditional Fried zuchinni flowers, all made with passion and refinement.
